Open captured file in Adobe Media Encoder.
Under format, choose h.264.
Under preset, choose Vimeo SD or Vimeo HD.
Click on preset name to open more options if necessary.
Upload to your Vimeo.com account

Linux: recordMyDesktop (free)

it's a command-line utility. Gtk-RecordMyDesktop is a GUI front-end for Gnome (e.g. Ubuntu), and Qt-RecordMyDesktop is a GUI front-end for KDE (e.g. SuSE, Kubuntu).

Records to ogg/vorbis, should be uploadable straight to Vimeo.
